A delicious North African recipe, perfect for a brunch on a rainy day to be enjoyed with a good sourdough bread

Ingredients

500g low fat mince lamb

1 onion
-
1 small bunch of parsley

1 small bunch of coriander
-
1 teaspoon of dried mint
-
1 jar of Moulins Mahjoub organic passata

1 teaspoon of Moulins Mahjoub sweet pepper harissa

1 teaspoon of ground cumin
-
1 pinch of salt
-
1 pinch of freshly ground pepper

1 table spoon of Casa del Agua picual extra virgin olive oil

4 eggs
Directions
Cut the onion and fresh herbs into small pieces. Keep some fresh parsley aside
Mix the onion, fresh herbs, harissa, salt, pepper, cumin, dried mint and minced lamb together in a large bowl and create small bowls from this paste
Heat the olive oil at medium heat
Fry the kofta bowls until brown on both sides
Add the passata and cook for another 10 minutes at medium heat
Add the eggs and cook for a further 5 minutes
Decorate with the remaining fresh parsley leaves
