Mackerel and Fennel Salad

Ingredients

100 grams cucumber

150 grams of salad leaves

30 grams of pickled gherkins

20 grams of Moulins Mahjoub organic wild mountain capers

1 preserved lemon

3 table spoons of Frantoio Franci olivastra seggianese extra virgin olive oil

2 fillets of smoked mackerel

1 table spoon of Due Vittorie Rosé Vinegar

Directions
Cut the onion, preserved lemon and gherkin into small pieces
Cut the cucumber into thin slices
Mix all the vegetables with the salad in a large bowl
Wash the salt off the capers and olives and add them to the mix
Squeeze the lemon and mix its juice with the oil, vinegar, salt and pepper
Mix the vinaigrette with the vegetables
Remove the skin from the mackerel fillet, cut it into chunky pieces and mix them with the salad
